  • 8 medium artichokes
  • 1/2 onion (large)
  • 1/2 red pepper
  • 1 carrot
  • 2 cloves garlic
  • 5 asparagus
  • 1/2 cup of rice (100 g)

  • Salt
  • Curry powder
  • White pepper
  • 1 egg

  • After that, wash and cut the mushrooms. Brown them in a pan with olive oil and add the rice and the ricotta cheese  .
  • Make sure you season well and mix everything properly.
  • Then remove the outer leaves of the artichokes and cut off their base.
  • Put them to boil in a pot of water until they become more tender.
  • Open the leaves and put the stuffing in them.
  • Prepare a dish for the oven with a little olive oil and place the artichokes in it.
  • To finish, sprinkle everything with almond flour and bake at 180 ° C for about 25 minutes.
