5 Delicious Recipes For Diabetics

1. Vegetable pudding

For this recipe (also ideal for those who want to lose weight), you will need the following ingredients:

  • 2 gelatin sheets
  • 1 half cup of chopped celery
  • 1 half cup of grated carrots
  • 6 tablespoons of apple cider vinegar
  • 1 teaspoon of chopped parsley
  • 1 half cup chopped mushrooms
  • half a cup of cherry tomatoes, cut into small pieces
  • Salt and pepper

Preparation

  • Soak the gelatin sheets in a bowl of water for 5 minutes.
  • Add the vinegar and 2 cups of boiling water.
  • Let sit in the fridge for 20 minutes. 
  • Then, stir in the vegetables and condiments.
  • Pour everything into a flan mold and leave in the fridge for at least 12 hours.
  • Then just unmould carefully when serving and eat it cold.

It is a good recipe for hot days or as a starter.

2. Tuna and rice bread

Another of the recipes and a very delicious little dish which is suitable especially for diabetics. Very easy to prepare, it also allows you to get out of the woods when you don’t know what to cook.

Ingredients

  • 1 can of tuna in brine
  • 2 egg whites
  • 1 half cup of brown rice
  • 1 half cup chopped onion
  • ¼ cup of chopped parsley
  • 1 half cup of chopped celery
  • 1 clove of garlic
  • 150 grams of tomato puree
  • 1 egg
  • 2 tablespoons of defatted broth
  • 1 half teaspoon of chilli
  • 1 tablespoon of oregano
  • ¼ teaspoon of curry
  • salt and pepper

Preparation

  • Mix the tuna with the rice, then stir in the celery and garlic.
  • Season with salt and pepper and set aside.
  • In another bowl, beat an egg with the two whites.
  • Add the tomato puree, broth, parsley and spices.
  • Pour in the first preparation and mix until everything is well combined.
  • Then pour everything into a previously buttered flan mold.
  • Cover with aluminum foil then bake for 50 minutes.
  • Remove the foil and cook for another 10 min.

Serve hot with a tomato sauce!

3. Stuffed zucchini

Also known as “gourds”, zucchini provides only 14 calories per 100g. It is one of the excellent recipes not only for diabetics, but also for those who have an overweight problem.

Ingredients

  • 3 zucchini
  • 100 g of skimmed ricotta
  • 1 egg
  • skimmed cottage cheese
  • cooked ham
  • salt, pepper and bell pepper
  • optional: 3 spoons of breadcrumbs

Preparation

  • Cut the zucchini into two equal parts and empty them.
  • Pour the pulp into a bowl and add the cheese, egg and ham.
  • Put salt and pepper at your taste.
  • Mix well then fill the zucchini with this preparation.
  • If you wish, sprinkle them with breadcrumbs and peppers.
  • Heat a pan with a little vegetable oil
  • Then cook the zucchini until golden brown

You can also cover them to make them cook better.

4. Chickpea balls

Chickpeas are widely used in oriental cuisine and have very good properties. You can therefore use chickpeas in your recipes without any problem if you are diabetic.

  • 500 g of chickpeas
  • 3 small onions
  • 1 garlic clove, chopped

Preparation

  • Cook over low heat and cover the onions and chopped garlic for 8 minutes.
  • Meanwhile, prepare the cooked chickpeas then add the eggs, oats and parsley.
  • Incorporate the previously cooked onions,
  • Then salt and pepper.
  • Mix to obtain a homogeneous paste.
  • Divide into 12 meatballs
  • Then cook them in a pan with vegetable oil for about 4 minutes, until they are golden brown.

Note that 2 meatballs contain 28 g of carbohydrate and 33 mg of cholesterol.

5. Tiramisu recipe for diabetics

It is one of the most popular desserts in the world. And it is also one of the recipes that many diabetics miss the opportunity to eat it thinking that it is forbidden for them.

Nothing could be further from the truth, because here is a recipe specially designed so that diabetics can also taste this wonder!

Ingredients

For the biscuit:

  • 2 eggs
  • 8 egg whites
  • 1 teaspoon of water
  • 5 tablespoons of powdered sweetener
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of corn starch
  • 100 g of baking flour

For the cream:

  • 200 g of skimmed cottage cheese
  • 1 tablespoon of low-fat vanilla yogurt
  • 1 gelatin sheet
  • 2 tablespoons of lemon juice
  • 1 spoon of Port
  • 3 egg whites
  • 4 tablespoons of powdered sweetener

For the dressage:

  • 150 g of coffee
  • Bitter cocoa for diabetics
  • Mint leaves
  • coffee beans

Even though the recipe contains a lot of ingredients, its preparation is not complicated.

For the biscuit:

  • Beat the egg whites
  • Then add the eggs, water and sweetener.
  • Then add the vanilla essence and the flour with the starch.
  • Mix until you get a smooth paste.
  • Pour on baking paper, on a baking sheet,
  • Then bake in a preheated oven on low heat for 10 minutes.
  • Let cool and unmold.

For the cream:

  • Moisturize the gelatin in the lemon juice beforehand, then cook it for 30 seconds in the microwave.
  • In a salad bowl, mix the cottage cheese, gelatin and yogurt.
  • Finally, add the Port, the sweetener and the beaten egg whites.

For the dressage:

  • Cut the cookie into slices,
  • Then moisten it with coffee and pour a portion of cream.
  • Cover another slice, then drizzle with coffee, and so on.
  • Sprinkle with the bitter cocoa.
  • Finally, decorate with coffee beans and mint leaves.

Serve chilled!
